So as you are all aware I have been struggling to get stuff done around the house, especially cook. But I read a friends blog (Thanks Dana) and got this recipe. Now I will say that I too changed it up a bit, but mostly followed her directions. But heres what I did and what you need.
::Easy Enchiladas::
1 lb chicken
4 cups mozzarella or quesadilla cheese
16 oz sour cream
1/4 tsp ground red pepper
about 7 flour tortillas
red enchilada sauce
Boil the chicken
Mix up the sour cream, shredded mozzarella cheese (2 cups), ground red pepper, and diced chicken in a large bowl
Fry the flour tortillas in oil for 5 seconds on each side
Next, dip each tortilla in the enchilada sauce
Spoon the chicken mixture in each tortilla and roll up nice and tight
place in a 9 x 13 pyrex
Cook at 375 for 25 minutes.
Top with last 2 cups cheese 5 minutes before taking out of oven!
Sorry I have no picture to share, we ate them up so fast last night, there was no time to take one! But I will say they were super good and definitely not hard to make. I suggest you give them a try and you too will be impressed.
