Still here!

I know its been awhile since my last post and I really just haven't had all that much to say.  So I thought I'd share a recipe with ya'll that I made not that long ago.  It's a Paula Dean, so you know its a good one.
I was watching the food network one morning, ( not a good idea while pregnant because you want to eat everything they show on screen) and on Paula's show she made this and it was oh so mouth watering good. So that day I went out and bought the stuff to make it and had for for dinner the next night! YUM!

Maple-Glazed Pork Chops

Ingredients

  • 4 teaspoons ancho chili powder
  • 1 teaspoon kosher salt
  • 6 (10-ounce) center cut bone-in pork chops, about 1-inch thick
  • 2 tablespoons olive oil, divided
  • 3 tablespoons balsamic vinegar
  • 1/2 cup butter maple syrup
  • 1/2 cup chicken stock
  • Pecans, toasted and chopped, optional garnish

Directions

In a small bowl, combine the chili powder and salt and sprinkle evenly over both sides of the pork chops.
In a large skillet, heat 1 tablespoon olive oil over medium-high heat. Add the pork chops and cook until browned, about 2 minutes per side. Reduce the heat to medium, and cook until desired doneness, about for 4 to 6 minutes.
In a small skillet, over medium-high heat, add the balsamic vinegar and cook until reduced by half. Stir in the maple syrup and chicken stock. Cook over medium heat until thick and syrupy, about 5 minutes.
Transfer to a serving platter and serve with the maple syrup. Garnish with toasted pecans, if desired.

Mashed Sweet Potatoes

Ingredients

10 cups sweet potatoes, peeled and chopped
1/4 to 1/2 cup butter
3 tablespoons honey
1/4 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt

Directions

Add the potatoes to a large Dutch oven and cover with water. Bring to a boil over medium-high heat. Reduce the heat and simmer or until the potatoes are tender, about 8 to 10 minutes, drain well. Return the potatoes to the Dutch oven and add the butter, honey, cinnamon, and salt. Beat at medium-low speed with an electric mixer until smooth. Transfer to a serving bowl and serve hot.
Cook's Note: For more sweetness, add more honey.

I also made grilled asparagus to go with it, which is one of my FAVORITE veggies.  I normally just wash them and trim off the edges.  Then rub some olive oil all over them and sprinkle with garlic salt.  You can grilled or broil them in the oven until they are tender. Delicious!

Sorry I don't have a picture to share, we gobbled it all down.  Like I said before, I haven't been cooking a lot lately so this was a real treat for Jong and he ate it all in a matter of minutes!

Easy Yummy Dinner!

So as you are all aware I have been struggling to get stuff done around the house, especially cook.  But I read a friends blog (Thanks Dana) and got this recipe.  Now I will say that I too changed it up a bit, but mostly followed her directions.  But heres what I did and what you need.

::Easy Enchiladas::
1 lb chicken
4 cups mozzarella or quesadilla cheese
16 oz sour cream
1/4 tsp ground red pepper
about 7 flour tortillas
red enchilada sauce
Boil the chicken

Mix up the sour cream, shredded mozzarella cheese (2 cups), ground red pepper, and diced chicken in a large bowl
Fry the flour tortillas in oil for 5 seconds on each side
Next, dip each tortilla in the enchilada sauce
Spoon the chicken mixture in each tortilla and roll up nice and tight
place in  a 9 x 13 pyrex
Cook at 375 for 25 minutes.
Top with last 2 cups cheese 5 minutes before taking out of oven!

Sorry I have no picture to share, we ate them up so fast last night, there was no time to take one! But I will say they were super good and definitely not hard to make. I suggest you give them a try and you too will be impressed.
